And I finally decided that rather than making Publix bakery and IHOP do most of my dirty work, I'd make my own treats.
I happened to have a box of my favorite cake mix, Pillsbury FunFetti, on hand.
I was craving pancakes and Funfetti.
So I decided to combine them.
There are a dozen recipes for Funfetti Pancakes on the internet. However, because I am lazy, I simply mixed 65g cake mix with 1/8 tsp baking powder, 1 egg yolk and about a tablespoon of full-fat milk and cooked the 'cakes evenly on a preheated griddle. I served them alongside two tablespoons of Funfetti icing, because who needs syrup when you can have frosting?
I am pretty sure I will be getting all of my 300 grams of carbs on Friday from these babies. They were THAT good. (And easy!)
As usual, it was back to my normal diet (plus water restrictions this week!) right away.
Max was hospitalized yesterday (he was discharged & is doing much better now!!) and, like a crazy person, I hauled my gigantic lunchbox (bearing three meals) and gallon jug into his room. This serves as one example of the myriad ways in which contest prep is totally abnormal, weird, unsustainable, etc.
Anyway. Happy WIAW! This time next week you'll be seeing some delicious post-show chow ;-)
