WIAW: Have Food, Will Travel

I know this is a common complaint amongst my fellow 20-something working gals, but I have to say it: This week is SUPER busy!


I started school this week (accelerated 6-week Micro class, here I come!), I'm still working at the pediatrician's office because my employer hasn't been able to replace me yet, and I start training for a new, school-friendly job this week. Oh, and I'm in contest prep.

This means I get up at 6am and don't stop until I go to bed at 9 or 10.


So I have been packing a TON of food.


Witness:




An egg, 1/2 cup egg whites, kale, summer squash, garlic, rosemary, oregano, and sea salt...eaten in my car on the way to school at the crack of dawn.




Chicken dressed with lemon pepper seasoning and oil, and yellow squash and zucchini topped with Mrs. Dash table blend. This was eaten during the drive from school to work.




Tilapia with Sarah's Sea Salt (Tuscan - best seasoning EVER) and oil, and cauliflower & broccoli with chili powder and paprika. This was eaten at work.




Chicken topped with chili powder, paprika, oregano, sea salt, red pepper flakes, a liiiittle garlic and oil, and green beans.

And in honor of the sensible snacking WIAW theme, here's a snack I've been enjoying lately:



That is one ounce of plain almonds dusted in half a packet of Splenda, a tablespoon of cinnamon, and a teaspoon of nutmeg.

  1. I made myself a kind of frittata/egg veggie bake thing, sliced it up and have been eating it all week - so quick and easy to grab when I don't have time to cook!

    Those almonds look nice, today I am going to try experiment in making my own Lara bars, not just for me but ones the kids will eat as snacks as well.

  3. Nice food prep for the busy week! I'm always so in awe of you with how well you plan!
    My favorite snack this week has been Whole Foods' Strider's snack trail mix-- I've been eating that stuff by the buckets haha ;D

  6. Good idea with the almonds! And are you not eating grains/fruit/carbs anymore for contest prep reasons? Even post workout? Just curious :)

    Good luck with everything this week- you'll dominate your busy schedule!

    1. I am still eating carbs post-workout...sweet potato and a piece of fruit and some beans =) These pics all just happened to be from an off day!!! =) No grains this prep though.

  7. I'm curious what kind of a cooler you have? I know this sort of pack your nearly every meal with you type of lifestyle. It can be so hard and requires a lot of prep. My favorite thing is my cooler. It's huge and carries everything I need it's the REI personal cooler. In the reviews a guy shows with pictures what can be fit in there here is the link - you can often find it on sale or get a coupon.     1. I feel BEYOND weird chowing down on chicken breast and veggies in my car haha. I feel like everyone's looking at me and thinking, "What in the WORLD is that girl doing?!?!?"

  9. i'm taking accelerated micro, too! boo for us! :) i love the diy flavored almonds idea - so essential for us frugal ladies! fav snack of the week - gotta be the smoothies in a bowl 'cause it's so darn hot!

  11. Favourite snack of the week would be a new chocolate bar I've had several times this week (oops. PMS!).

    My week has been sloooow. I think it's because we've had so many public holidays over the last few months that a full week feels really long!

  13. You are AWESOME, Sable! I get annoyed with packing lunch for work sometimes so I can only applaud the fact that you pack MULTIPLE meals daily. That sure is dedication :)! Favorite snacks of the week are either an apple with almonds or Greek yogurt with protein powder and pomegranate seeds!

  15. Oh healthy pretty and varied meals! I admire your dedication to your plan and schedule. You tell the doc the deadline, he will get of his rump and hire the replacement. 6 week classes are intense. Holy high five Sable!
