Oats in...an apple?!

Hey hey bloggies!

Happy mid-week morning to ya! :)


I had a fabulous birthday yesterday thanks to an amazing hubby, family, and lots and lots of birthday wishes!

Check out what I got from the hubster:


Tie-dye flowers to match....


An egg-free, dairy-free tie-dye cupcake! It matches my hippie heart ;-)

And NO birthday would be complete without some peanut butter. I also happened to have a GINORMOUS apple on hand, so I decided to get creative...

First I hollowed it out. I did this by using a paring knife to cut a square around the stem, then I used a spoon to dig out the core and make plenty of room in the middle.

Then, I filled it with oats, peanut butter, and vanilla almond milk, mixed it all up, and put it in the fridge for about 4 hours.


Then I baked it at 400 degrees for about 30 minutes, until it was soft....


And dug in with a spoon! It was GREAT. Highly recommended!

So now that we've got birthday reminisces and a fabulous recipe out of the way, I have to ask you guys for a favor.  Max & I need your prayers and positive thoughts.

I can't really get into specifics *yet* for a lot of reasons (I promise I will as soon as I can) but basically, we're waiting on a set of orders for him. We've been playing this waiting game for 6 long months. His chain of command despises him for no reason (other than the fact that he hurt his chest a year and a half ago and couldn't work for a while because he couldn't wear a 40lb vest for 12 hours a day while he was healing). They've been trying to get out of giving him these orders with all their might and all their tricks.


So right now, I've got to make a decision about which school to finish my last year at...in two weeks. We're supposed to hear final word...in two weeks.  We've been told this before.  If you pray, could you just send up a little prayer that we'll hear something definitive before May 26th?

I feel silly asking this when there are so many people truly suffering in the world -- but we just need to know where we are going to be living.


And with that, I'm off to plant my butt in the couch and finish reading Skinny by Diana Spechler. I just got it yesterday guys. I'm trying to slow down but it's SO GOOD!

  7. Oh gosh, I hope things work out for you guys. I don't pray, but I will hope as hard as I can, and perhaps consider a little rain dance for you or something :) Seriously though, fingers crossed...

  24. You and your family are definitely in my thoughts. And NEVER feel like you have to downplay your struggles. Sure it's good to keep things in perspective, but you don't need to devalue your problems just because others have "bigger" problems. I think we, women, tend to do that too often. Acknowledging our trials and giving them worth is another form of respecting ourselves!
    I truly do hope you find out his orders soon!
